menu development & training

From proposition to launch. We develop a brief, create your menu, establish supply chain, produce recipes supported by full dish specifications, costings and step-by-step methodology. Once development is complete we train the kitchen team and support the launch.

We were engaged to create a premium fried chicken concept from scratch including; menu creation and development, name and brand identity, site design, staff training and launch support.

Wayne Timbrell Chef Consultant

With a career spanning over 20 years Wayne started his professional life as a chef working in hotels and restaurants in the UK before deciding to further his skill set and hone his natural talents abroad in France and Italy where he refined his approach to cooking and food development.

Returning to the UK Wayne led food development and kitchen operations for some of the country’s leading casual dining brands including; Giraffe, Ed’s Diner, Slim Chickens and Harry Ramsdens.

Whilst at Boparan Restaurant Group Wayne overseen an F&B estate in excess of 100 locations. Wayne’s true passion is developing bespoke brands from scratch and has developed a plethora of concepts for partners such as; Hilton, Sainsbury’s and the Bliss Hotel Group.

His in-depth knowledge, tireless work ethic and exceptional operational expertise make Wayne an expert in developing new brands right through to delivering them successfully to market.

Michael’s creative flair and strategic approach combined with a proven track record of delivering award-winning brands to market in some of the world’s most competitive retail environments make him an industry expert with a profound understanding of what it takes to develop, create and grow a concept into a successful business.

Throughout his career Michael has worked with some of the industry’s leading innovators such as The Draft House and Honest Burgers and was pivotal in the acquisition and launch of brands such as; BrewDog and Shake Shack in to UK Airports, whilst working at The Restaurant Group (TRG Concessions).

Michael has built up a wealth of experience within the industry with high level experience across various sectors including travel, hotels, pubs, specialist bars and restaurants.
