premium QSR fried chicken concept

We were engaged to create a premium fried chicken concept from scratch including; menu creation and development, name and brand identity, site design, staff training and launch support.

category mix analysis, concept creation & launch

Our client, a zoo operator, engaged us to review their F&B offering. We proposed the creation of four new propositions, including a full service pizza restaurant supported by three satellite concession concepts. The end to end project was completed in six weeks.

commercial modelling & review

Our client is in the development phase of a new commercial property scheme. They required assistance in developing a commercial model for their restaurant concept in order to establish budgets and support their financial business case. We produced a preliminary financial base case including; site level P&L, costed indicative rota, sales modelling, food brief,  initial menu and the creation of project critical path document.

menu development, kitchen & front of house operational design review

Our client is currently mid-way through construction of a second independent living retirement village, We were asked to review the current design, layout and zoning of the restaurant, bar and kitchen, create a menu brief and initial menu and produce a kitchen equipment and smallwares list for launch.

menu development, training & operations support

Our client approached us with a concept and site already designed and located. We were engaged to create a QSR burger focused menu and deliver end-to-end food development and kitchen training for launch. Additionally, we are providing long term operations support.

preparing to franchise

A client approached us to create a suite of brand documentation in preparation for gearing their concept up to franchise. We created; bespoke training guides, brand guidelines, operating manuals and worked with a franchise lawyer to define and develop the franchise agreement.

A returning client asked us to create a modern chicken concept from scratch including; menu creation and development, name and brand identity, site design, project management, staff training and launch support.

multi unit category mix & commercial modelling

Our client, a world leading venue operator, is opening a new arena in 2024. They required a recommendation report of concept and category types, a model to support footfall conversion to sales with indicative sales projections driven by spend per head and number of covers, indicative P&Ls for the approved category types, cost per square metre fit out projections and top line review of the commercial model, owner operated vs franchise.

vietnamese fast casual concept

Our client was looking to develop a Vietnamese QSR concept. They had a menu they wanted to develop. They required; use of a commercial kitchen, brand proposition development, food and beverage supply chain set up and recipe development including; dish and batch recipe specifications, step by step methodology, packaging range and final costings.
